Crispy Parmesan Carrots

Seeing as we would like to try new recipes and save money, we’ve decided to feature certain foods every week. That means we can stock up on one food, and try a few new recipes with it! This week, we (Robin) decided to choose carrots. We now have a big pile of yummy (and dirty) carrots!

Our first recipe is Crispy Parmesan Carrots. We adapted the recipe quite significantly from the one we originally found here, and our version was very yummy!

Crispy Parmesan Carrots

Ingredients:

  • 3 Large Carrots, chopped as shown
  • .25 cup Gluten-Free All Purpose Flour
  • .25 cup Parmesan, shredded
  • 2 tablespoons Margarine (or Olive Oil, or Butter, or anything else, really)

(Serves 2)

Preparation time: 15 minutes

Cooking time: 25-30 minutes

Ready in: 40-45 minutes

  1. Preheat oven to about 375° F – though this is totally guesswork on my part. Ours tasted delicious!
  2. Cut up the three large carrots into about baby sizes.
  3. Coat the cut up carrots in margarine (or olive oil, or butter) in a large mixing bowl.
  4. Throw in most of the flour and parmesan and coat evenly.
  5. Spray an oven tray with vegetable oil and place the carrots.
  6. Sprinkle the remaining flour and parmesan on top of the carrots.
  7. Put in the oven and distract yourself for about 25-30 minutes, depending on how crispy you’d like them.
  8. Remove from oven and put in a pretty dish. Add a dash of salt and some dried herbs, and you are set.
Note: We had ours as a side to a Paprika Chicken Thigh – delicious! It can be a snack, a starter, or a main course. Well, maybe not that last one…

  • Carrots: $0.70
  • Gluten-Free All Purpose Flour: $0.30
  • Parmesan: $1.18
  • Margarine: $0.30
Total: $2.48
